- Kale (1 bag)
- Slivered Almonds
- 2 Lemons
- Pecorino cheese ½ cup (grated)
- 2 apples
- Olive oil
- Salt and Pepper
- 2 tsp Sugar (optional)
- First make the vinaigrette
- Squeeze the lemons and add double the amount of olive oil, add sugar, salt and pepper in a bowl. Whisk.
- Add kale to the bowl with the vinaigrette and massage until kale is soft (almost wilted)
- Slice the apple into sticks and add to kale
- Add pecorino cheese and almonds
- Toss salad and serve.
